«Emmentaler Switzerland AOP»

“Emmentaler Switzerland AOP, Réserve” is a cheese for the savourer. The first quality control takes place after 4 months maturing, and the suitable loaves are chosen to mature longer, until they acquire that certain something, which lets it become the “Réserve Quality”. These loaves are intensively cultivated in a special maturing room for eight months. They are left to mature in a temperature from 11 – 14°C and by a humidity of over 90%.
To ensure that the Swiss Emmentaler can be identified straight away as the original, there is – on each cheese loaf – the cheese-maker’s sign and the individual registration number of the cheese-maker. These provenance markings stand for the highest quality and the observance of the very strict production regulations. (www.emmentaler.ch).
